The Braising Box

The cold weather is upon us and it's time for a warm and comforting meal! That's why we offer an all in one ready-to-braise box ! Starting with a succulent Quebec chuck roast, our braising box will allow you to create a wonderful comforting meal for the whole family with all the necessary side dishes to fill the plate. With all the ingredients on hand, you'll be able to warm the hearts of the whole family without too much hassle!


We work with local farmers in order to offer you pasture-raised Quebec beef. To assure quality, we choose producers who are conscientious about animal well-being, and focus on raising their cattle without hormones or antibiotics. We offer you beef equivalent to grade AAA or higher at all time. For unique flavour, tenderness and quality marbling, we prioritize the Angus breed.


The box includes :


  • 750 ml of charred pepper and mustard seed flavoured veal stock 
  • 1 Quebec beef chuck roast, about 1.5 kg
  • 125 mL of red cooking wine
  • Nantes carrots
  • pearl onions
  • king oyster mushrooms
  • mini rabioles
  • garlic
  • aromatics blend




Conseil :

  1. Preheat the oven at 325 F. 
  2. Salt generously each side.
  3. With a small amount of oil, sear over a medium-high heat each side of the meat about 4-5 minutes. Reserve.
  4. Reduce heat to medium and cook the yellow onions about 2-3 minutes in the same pan.
  5. Add the red wine and let it reduce halfway.
  6. In a roasting pan, put the meat, the aromatics and the reduction of red wine and onions. Pour the veal stock in the roasting pan. 
  7. Leave on the heat to bring to a boil, cover and put in the oven for about 2h40.
  8. Meanwhile, peal the pearl onions and cut the king mushrooms in half.
  9. After 2h40 of cooking, add the potatoes, the pearl onions, the carrots and the mini rabioles in the roasting pan and cook for about 20 minutes. 
  10. Take out of the oven and let rest for 10 to 15 minutes.
  11. Meanwhile, heat a bit of vegetable oil to high heat.
  12. Cook the king mushrooms until desired color about 4-5 minutes.
  13. Put everything togheter into your guest's plates.
  14. Serve and enjoy!
