VALENTINE’S DAY BOX


Celebrate Valentine’s Day with an intimate one-on-one in the comfort of your home with our two-person lunchbox. You will certainly be charmed by its gourmet content that requires very little preparation*.

Pre-order your love supper now for the February 14th, 15th, 16th or 17th.

The box contains:

  • Mixed greens, radishes, puffed wild rice and black garlic dressing.

  • Homemade cappelletti with ricotta, shiitake, parmesan butter and arugula.

  • Duck breast from La Canardière, white beet and cherry meat juice.

  • 2 individual chocolate tartlets, passion fruit and praline ganache.



METHOD OF PREPARATION

First serve


RICOTTA RAVIOLI
Keep the ravioli frozen.
Remove from the bag and cook in a pot of salted boiling water for 3 minutes.
Drain gently.

PARMESAN BUTTER:

Heat the sauce in the microwave or skillet over low heat.

DRESSAGE
Place a portion of the Parmesan butter at the bottom of a hollow bowl.
Add the ravioli, garnish with the shiitake condiment, Parmesan shavings and arugula.

SALAD:

Mix lettuce container with burnt pepper dressing and garnish with wild rice before serving

Second serve

PRE-COOKED DUCK BREAST AND CAMERISES SAUCE

  • Put hot tap water in a pot.

  • Dip the vacuum bag containing the duck breast.

  • Let warm for about 10 minutes.

  • Remove the bag from the water and then remove the magret.

  • In a skillet over medium heat, place the duck breast, skin side down, until browned.

  • Turn flesh side over and cook for 1 minute.

  • Remove from pan, let stand 5 minutes covered with aluminum foil.

  • Heat the cherry sauce over low heat in a small pot (or microwave) for a few minutes.

  • Stir well and pour over the breast.

  • Serve.

GRILLED VEGETABLES

  • Preheat the oven to 425 F.
  • Remove the lid from the “Grilled Vegetables” tray and bake for 10 to 15 minutes or until heated through.
  • Mix the grilled vegetables with the marinated vegetables and serve. Season as needed.


VEGETABLE PUREE
Heat the white beet purée in the microwave or skillet over low heat.

DRESSAGE
Place the purée in the bottom of a plate, followed by the vegetables and a portion of the braised mace. Drizzle with morel sauce and serve.

DESSERT:

Decorate the tartlets with flower petals and enjoy!
