The "côtes découvertes" are the first five pairs of ribs after the lamb's neck. With both fatty and lean parts, they are suitable for many preparations. You will enjoy this meat, whether it is braised, grilled or incorporated into delicious stews.

Producer

Located in Saint-Charles-sur-Richelieu, Bergeries Marovine is involved in the production of lambs fed with corn silage and alfalfa grown on their own land. Conscious of raising animals with the utmost respect thanks to their exemplary practices, they have been offering high quality sustainable meat for over 15 years.

Cooking tip

Stew on the bone: 1h30 minimum on low heat.
Grilling or pan-frying: 2 to 3 minutes on each side, depending on thickness. Preferably cooked pink.
