Quebec guinea fowl (precooked)

For a tasty weeknight meal that you can prepare in no time we suggest our pre-cooked guinea fowl. Deboned and pressed to layer white meat over dark meat, our guinea fowl allows you to enjoy one extraordinary bite after another. Since it is already cooked sous-vide, all you have left to do is sear the meat to give it some color and add your favorite sauce and garnishes for an easy, succulent meal. With its tender, lean, protein-packed meat, guinea fowl is an excellent alternative to chicken. 


Situated in Cap-Saint-Ignace, Ferme Kégo-Cailles is a family business specializing in the production of fine poultry since 1988. Their guinea fowl is raised without antibiotics and is fed exclusively on plant feed made of barley, wheat, corn and minerals which results in an exquisite and tasty product.


Cooking Tips :

Since the guinea fowl is already cooked, all that remains is to reheat and color it.

  • Place the sous-vide bag containing the guinea fowl in a bath of hot water of about 50 degrees (the equivalent of hot tap water).
  • Allow it to warm up for 10 (ten) minutes, then take the bag out of the water, remove the guinea fowl and dry it on a sponge paper or kitchen towel.
  • In a non-stick skillet over medium heat, brown the guinea fowl in a little vegetable oil for about 4 to 5 minutes per side or until nicely browned. It is important not to turn it over too often.
