Quebec lamb shank

Located at the shin level of the hind legs, the lamb shank is the equivalent of the veal shank. This meat is rich in nutrients and flavor and gets even better when aged. To offer you unique flavor and unparallel tenderness we age our lamb shanks for a minimum of 14 days. You will enjoy this easy to cook piece, ideal for braising and slow cooking.



Located in Saint-Charles-sur-Richelieu, Bergeries Marovine is involved in the production of lambs fed with corn silage and alfalfa grown on their own land. Conscious of raising animals with the utmost respect thanks to their exemplary practices, they have been offering high quality sustainable meat for over 15 years.

Cooking tip

Colour on all sides and finish cooking in the oven in a casserole for at least 1h30
