      Cooking advice

      Cooking temperature: medium-rare (56ºC)

      - Remove and let the meat come to room temperature about 15 minutes before cooking.
      - Sear the meat over medium-high heat for about 3 minutes on each side (watch the meat closely, as the marinade speeds up browning).
      - Reduce the heat to medium and continue cooking until it reaches 54ºC in the center, turning regularly.
      - Let the meat rest on a rack and wrap it in aluminum foil to allow it to rise by an additional 2 degrees.
      - Cut against the grain (especially for flank steak since it is very fibrous) and serve.
