  • Homemade brioche bread, whipped butter, and fleur de sel.
  • Ricotta cappelletti, sea urchin butter, caramelized leeks, and trout egg condiments.

Cooking advice

1. Preheat oven to 375C.
Confit Leeks - Vinaigrette:
Let the bag sit for one hour. Add the dressing and toppings on top.

Brioche bread:
Bread: Heat in the oven for 6 minutes, let it cool.
Butter: Leave to cool for about 1 hour.

Cappelleti:
Boil a pot of salted water. Add the cappelleti and cook for 3 minutes. At the same time, gently heat the
sea ​​urchin butter in a large skillet. Add the cooked cappelleti to the sea urchin butter. Serve on 2 plates and add the
garnishes on each plate.

Stuffed quail:
Cook the quail for 35 minutes.
Cook the salsify tray at the same temperature for 15 minutes.
Heat the onion puree and meat juice in the microwave for 2 minutes or in a skillet until hot.
Place all the items on the plate and add the toppings once everything is ready.

Breton shortbread:
Remove from the freezer the day before and refrigerate at room temperature for 2 hours. Cut in half or eat on the same plate for a closer look.
