Cooking advice

Osso Buco:
Cooking time: 1 hour at 350 and 1 hour at 325ºF

- Thaw the beef shanks in the refrigerator the day before or in water 30 minutes before cooking.
- Preheat the oven to 350ºF.
- Coat the beef shanks in flour.
- In a saucepan, sear over medium-high heat on both sides in a drizzle of vegetable oil. Salt and pepper. Set aside.
- In the same saucepan, brown the onions. Deglaze with white wine.
- Return the beef shanks to the saucepan and cover with an aromatic broth of your choice.
- Bake covered for about 1 hour. Reduce the oven temperature to 325ºF and continue cooking for 1 hour.
- Serve and enjoy.

Thor's Hammer:
Cooking time: 4 hours 30 minutes to 5 hours 30 minutes at 300ºF

- Remove the meat 1 hour before cooking so that it is at room temperature, season generously with salt/pepper. Preheat the oven.
- Sear the meat on all sides with a little oil to brown it well. Set aside.
- Baste the meat from time to time with the juices. Remove the lid for the last hour to allow for beautiful caramelization.
- Check that it is cooked: the meat should be tender and almost fall off the bone with a fork.
