Cooking advice

Osso Buco:
Cooking time: 2 hours at 325°F

- Defrost the beef shanks the day before in the refrigerator or in water 30 minutes before cooking.
- Preheat the oven to 350ºF.
- Coat the beef shanks in flour.
- In a saucepan, sear over medium-high heat on both sides in a drizzle of vegetable oil. Season with salt and pepper. Set aside.
- In the same saucepan, brown the onions. Deglaze with white wine.
- Return the beef shanks to the pot and moisten with an aromatic broth of your choice.
- Bake for approximately 1 hour covered. Reduce the oven temperature to 325°F and continue baking for another hour.
- Serve and enjoy.

Thor's Hammer:
Cooking time: 4.5 to 5.5 hours at 300°F

- Take the meat out 1 hour before cooking so that it is at room temperature, season generously with salt and pepper. Preheat the oven.
- Sear the meat on all sides with a little oil to brown it well. Set aside.
- Baste the meat occasionally with the juices. Remove the lid for the last hour to allow for a nice caramelization.
- Check if it's cooked: the meat should be tender and almost fall off the bone when pierced with a fork.
