      Cooking advice

      Cooking temperature: medium-rare (56ºC)

      - Preheat oven to 350°F
      - Take the meat out and let it temper for 20 to 30 minutes before cooking.
      - Generously salt each side.
      - Sear the whole piece over medium-high heat until well colored on each side.
      - Continue cooking in the oven until the internal temperature reaches 54ºC.
      - Let rest on a rack and wrap in aluminum foil for at least 10 minutes to gain an additional 2 to 3 degrees.
      - Cut the prime rib against the grain and serve.
