Quebec roast beef

For great entertaining at home, nothing beats a hearty roast beef. You will delight friends and family alike with the succulent, juicy roast from the top (inside) round of Quebec beef. 


We work with local farmers in order to offer you pasture-raised Quebec beef. To assure quality, we choose producers who are conscientious about animal well-being, and focus on raising their cattle without hormones or antibiotics. We offer you beef equivalent to grade AAA or higher at all time. For unique flavour, tenderness and quality marbling, we prioritize the Angus breed.


Cooking tip :

Cooking temperature: 56ºC

  • Take out and temper the meat about 15 minutes before cooking.
  • Preheat oven to 275ºC.
  • Generously salt each side of the roast.
  • In a skillet, sear the roast on all sides over high heat. Set aside.
  • In the same skillet, brown the vegetables of your choice and deglaze with red wine.
  • Pour the contents of the skillet into a roasting pan, add the roast, and place it on a rack in the middle of the pan.
  • Cook for about 1,5 hours or until the roast reaches 54ºC.
  • Remove from the oven, wrap in aluminum foil and let rest for about 15 minutes.
  • Cut into thin slices against the grain, serve and enjoy.
