Cooking advice

Cooking temperature: medium-rare (56ºC)

Take out and temper the meat about 15 minutes before cooking.
Generously salt both sides.
Sear the meat over medium-high heat for about 3 minutes on each side.
Reduce the heat to medium and continue cooking until it reaches an internal temperature of 54ºC, turning it regularly.
Let the meat rest on a rack and wrap it in aluminum foil so it can gain the last few degrees it needs.
Serve and enjoy.
