Little known by the general public since it is more often prepared, the pork shoulder is known for its richly flavoured roasts and the famous pulled pork of the southern United States. This tougher meat can scare some, but here we offer you an exceptional shoulder. Although perfect for a braise or a roast, our Quebec Beaurivage pork shoulders are good even on the grill thanks to its unique marbling and the quality of its breeding.

Producer

La Ferme de porc de Beaurivage is a family business located in St-Patrice-de-Beaurivage that specializes in raising pigs and fattening piglets. With more than 100 years of expertise, their breeding methods are very humane and respectful of the environment and the animal. The feed, created on site, is 100% vegetable based on high quality grains. In addition, the animals are raised without antibiotics, drugs and other by-products and without hormones or growth stimulants.

Cooking tip

Cooking time: minimum 3h30 at 325ºF

- Take out and temper the meat about 15 minutes before cooking.
- Preheat oven to 325ºF.
- Generously salt the pork shoulder.
- Sear the meat over medium-high heat until evenly colored in an ovenproof pan.
- Baste with an aromatic broth of your choice.
- Bring to a boil.
- Bake, covered, for a minimum of 3.5 hours or until the meat falls apart easily.
- Serve and enjoy.
