Québec lamb loin chops

Picked from the saddle, loin chops are among the most tender and flavorful cuts of lamb. Cut into individual pieces with the bone in order to retain maximum flavor, they will reveal their full potential when grilled on the barbecue.


Located in Saint-Charles-sur-Richelieu, Bergeries Marovine is involved in the production of lambs fed with corn silage and alfalfa grown on their own land. Conscious of raising animals with the utmost respect thanks to their exemplary practices, they have been offering high quality sustainable meat for over 15 years.

Cooking tip

Cooking temperature: Rosé - 58ºC

- Take the lamb chops out of the refrigerator and let them temper for about 15 minutes before cooking.
- Preheat oven to 325ºF.
- Sear over medium high heat on each side until lightly colored.
- Cook in the oven for about 7-8 minutes or until the chops reach 56ºC in the middle.
- Remove from oven and let rest for about 5 minutes to allow meat to gain the extra 2 degrees.
- Serve and enjoy.
