Cooking tip

- Remove from the refrigerator and let it temper for about 15 minutes before baking.
- Preheat the oven to 350ºF.
- Sear over medium-high heat on each side until lightly browned.
- Put the roast on a baking sheet and cook for about 45 minutes to 1h, or until the temperature reach 74ºC. Baste in its cooking juice a couple times during the cooking process.
- Remove from oven and let rest for about 15 minutes.
