The marbling
We know that it is often difficult to find good Quebec beef in grocery stores and that is why we have made it our mission to offer high quality and easily accessible meat.
But what exactly do we mean by “high quality meat”?
First of all, you should know that in Canada, all beef intended for sale is assigned one of the following grades based on their age and marbling: Prime, AAA, AA and A.
At Édouard et Léo , only AAA or Prime grade products are offered.
THE PARSLEYING
Marbling refers to the small filaments of fat that dot the meat.
The more this intramuscular fat, the higher the quality of the product since it melts during cooking and gives the beef all its tenderness and incomparable flavor.
Contrary to popular belief, marbling is not due to the breed of the steer, but mainly to its genetic background and the way it is fed.
