We know it is often difficult to find good Quebec beef in grocery stores, which is why we have made it our mission to offer high-quality and easily accessible meat.
But what exactly do we mean by "high-quality meat"?
First of all, it should be known that in Canada, all beef intended for sale is assigned one of the following grades based on age and marbling: Prime, AAA, AA, and A.
At Édouard et Léo, only AAA or Prime grade products are offered.
MARBLING
Marbling refers to the small strands of fat that speckle the meat.
The more intramuscular fat there is, the higher the quality of the product since it melts during cooking and gives the beef all its tenderness and incomparable flavor.
Contrary to popular belief, marbling is not due to the breed of the steer, but mainly to its genetic makeup and how it is fed.
