Marbling
We know that it is often difficult to find good beef from Quebec in grocery stores, which is why we have made it our mission to offer high-quality meat that is easily accessible.
But what exactly do we mean by "high-quality meat"?
First of all, it should be noted that in Canada, all beef intended for sale is assigned one of the following grades based on their age and marbling: Prime, AAA, AA, and A.
At Édouard et Léo, only AAA or Prime grade products are offered.
MARBLING
Marbling refers to the small strands of fat that are scattered throughout the meat.
The more important this intramuscular fat is, the higher the quality of the product, as it melts during cooking and gives the beef all its tenderness and incomparable flavor.
Contrary to popular belief, marbling is not due to the breed of the steer, but primarily to its genetic background and the way it is fed.
